Rock County Pork Producers prepare for Porkfest

The Rock County Pork Producers will be busy Tuesday night seasoning 23,000 pork chops for Wednesday's Porkfest.

Co-chair Kathy Morton says the chops arrive in a refrigerated truck Tuesday, specially ordered from Sorg's Quality Meats & Sausages in Darien. She says the seasoning takes several hours, then marinates overnight. In the past three years, the Pork Producers have had to stop selling uncooked chops because they were running out of the cooked chops. Morton says 10,000 uncooked chops will be packaged for sale.

Proceeds of the annual event benefit various community groups and scholarships. The money also funds repairs to the swine barn at the Rock County 4-H Fairgrounds.

Dinner will be served on the fairgrounds from 5-8pm Wednesday.

The drive-thru opens at 4pm.
